These Korean-inspired air fryer chicken wings are built for crisp skin first and sticky glaze second. A light cornflour coating helps the wings brown in the air fryer, while a quick gochujang-honey sauce brings the sweet heat at the end.

  1. Pat the chicken wings very dry with kitchen paper. This helps the skin crisp instead of steaming.

  2. In a large bowl, mix the cornflour, garlic powder, onion powder, salt and pepper. Add the wings and toss until lightly coated all over, then drizzle with the neutral oil and toss again.

  3. Preheat the air fryer to 200°C for 3 minutes. Arrange the wings in a single layer with space between them; cook in batches if needed.

  4. Air fry for 24–30 minutes, turning the wings halfway through, until crisp, browned and cooked through. Check the thickest part of the wing without touching bone; chicken must reach at least 74°C/165°F internally.

  5. While the wings cook, make the glaze. In a small saucepan, combine the gochujang, honey, soy sauce, rice vinegar, sesame oil, garlic, ginger and brown sugar. Simmer over low heat for 2–4 minutes, stirring, until glossy and slightly thickened.

  6. Transfer the hot cooked wings to a clean bowl. Pour over the warm glaze and toss until every wing is coated.

  7. Sprinkle with sesame seeds and spring onions, then serve immediately while the coating is still crisp-sticky.

Tips & tricks

  • Gochujang varies in heat and saltiness, so use a mild one if cooking for spice-sensitive eaters.
  • Do not sauce the wings before air frying; the honey and sugar can burn before the chicken is cooked.
  • For extra-crisp wings, let the coated wings sit uncovered in the fridge for 30 minutes before cooking.
  • If cooking in batches, keep the first batch unsauced and re-crisp all wings together for 2 minutes before tossing with glaze.
