Crispy Air Fryer Sweet Chili Chicken Bites
Panko-crusted chicken bites air-fried until golden, then tossed in a glossy sweet chili garlic glaze for rice bowls, wraps, or snacks.

These sweet chili chicken bites are built for crunch first: a light seasoned flour layer helps the egg stick, panko brings the crisp texture, and the sticky garlic-chili glaze goes on after air frying so the coating keeps its bite. Serve them over jasmine rice, tuck them into wraps with crunchy slaw, or pile them onto a platter as a sweet-spicy appetizer.

Air fryer:200°C / 392°F

Preheat the air fryer to 200°C for 3 minutes. If your basket is small, plan to cook the chicken in 2 batches so the pieces can sit in a single layer with a little space around them.
Set up three shallow bowls: mix the flour, cornflour, salt, garlic powder, paprika, and pepper in the first; add the beaten eggs to the second; add the panko to the third.
Pat the chicken pieces dry. Coat each piece in the seasoned flour, dip in egg, then press into the panko. Drizzle the breaded chicken with 2 tablespoons oil and toss gently, or mist all sides with oil spray.
Arrange the chicken in the air-fryer basket in a single layer. Air fry at 200°C for 10–13 minutes, turning or shaking after 6 minutes, until crisp, golden, and the thickest piece reaches 74°C/165°F internally.
While the chicken cooks, make the glaze. In a small pan over medium heat, stir together the sweet chili sauce, soy sauce, rice vinegar, ginger, garlic, and sesame oil. Simmer for 1–2 minutes.
Stir in the cornflour slurry and cook for 30–60 seconds, until the glaze looks glossy and lightly thickened. Remove from the heat.
Transfer the cooked chicken bites to a large bowl. Add the warm glaze and toss quickly until lightly coated. Sprinkle with spring onions and sesame seeds, then serve with lime wedges.
Tips & tricks
- For the crispiest coating, sauce the chicken just before serving rather than letting it sit in the glaze.
- Check the largest chicken bite with a thermometer; colour alone is not a safe doneness guide.
- Do not overcrowd the basket. Crowded panko steams instead of crisping, so batch cooking is worth it.
- Leftovers should be refrigerated within 2 hours. Reheat unsauced bites in the air fryer at 180°C for 3–5 minutes, then add fresh glaze if possible.
