Crispy Hot Honey Air Fryer Halloumi Fries

These hot honey halloumi fries are built for the air fryer: halloumi holds its shape, browns fast, and needs only a light cornflour coating for crisp edges. A sweet-spicy lemon honey drizzle balances the salty cheese, while cool yogurt makes it feel like an easy mezze-style snack.

  1. Cut the halloumi into fries about 1 cm thick. Pat them very dry with kitchen paper so the coating clings and crisps.

  2. Mix the cornflour, smoked paprika, oregano, garlic powder, and black pepper in a shallow bowl. Toss the halloumi fries in the mixture, pressing lightly to coat all sides.

  3. Drizzle the coated halloumi with the olive oil and toss gently. Preheat the air fryer to 190°C for 3 minutes.

  4. Arrange the halloumi fries in a single layer with small gaps between them. Cook in batches if needed; overcrowding will make them steam instead of crisp.

  5. Air fry for 8–10 minutes, turning carefully after 5 minutes, until the edges are golden and the coating looks dry and crisp.

  6. While the halloumi cooks, warm the honey and chilli flakes in a small pan or microwave-safe bowl until runny. Stir in the lemon juice.

  7. Mix the Greek yogurt, lemon zest, and mint in a small bowl for the dip.

  8. Let the halloumi fries stand for 1–2 minutes; the centres will be very hot. Drizzle with hot honey and serve straight away with the lemony yogurt and lemon wedges.

Tips & tricks

  • Add the hot honey after air frying, not before, so the honey does not scorch in the basket.
  • Halloumi varies in saltiness, so the coating needs pepper and spices rather than extra salt.
  • For the crispest finish, shake off excess cornflour before oiling and keep the fries spaced apart.
  • Serve immediately; halloumi is at its best while hot, crisp-edged, and slightly squeaky.
