Crispy Air Fryer Korean Cauliflower Bites

These Korean-inspired cauliflower bites use a light batter and panko crust for crunch, then get tossed in a glossy gochujang, honey, garlic and ginger glaze. Air frying gives the florets crisp edges while keeping the centres tender, making them a fun vegetarian appetiser or rice-bowl topping.

Crispy Air Fryer Korean Cauliflower Bites after step 3: Place the panko in a shallow bowl. Dip the cauliflower florets into the batter, let excess drip off, then press into the panko. Set on the tray as you work.

  1. Preheat the air fryer to 200°C for 3 minutes. Line a tray with baking paper for holding the coated cauliflower, but do not line the air-fryer basket unless your model allows it and airflow remains clear.

  2. Whisk the plain flour, cornflour, garlic powder, salt and pepper in a large bowl. Add the cold water and whisk to make a smooth batter that lightly coats a spoon.

  3. Place the panko in a shallow bowl. Dip the cauliflower florets into the batter, let excess drip off, then press into the panko. Set on the tray as you work.

  4. Drizzle or spray the coated cauliflower with 1 tbsp oil, turning gently so the crumbs are lightly moistened. This helps the panko brown instead of staying dry.

  5. Arrange the cauliflower in a single layer in the air-fryer basket, leaving space between pieces. Cook in batches if needed; crowded florets will steam and turn gummy.

  6. Air fry for 14–16 minutes, turning or shaking gently after 8 minutes, until the coating is golden and crisp and the stems are tender when pierced with a knife. Larger florets may need 2–3 minutes more.

  7. While the cauliflower cooks, make the glaze. In a small saucepan or microwave-safe bowl, combine the gochujang, honey, soy sauce, rice vinegar, sesame oil, grated garlic, ginger and 1 tbsp water. Warm briefly and stir until glossy and pourable.

  8. Transfer the hot cauliflower to a large bowl. Add the glaze and toss gently until just coated. For a stickier set, return the sauced bites to the air fryer for 1–2 minutes at 190°C, watching closely so the honey does not scorch.

  9. Sprinkle with sesame seeds and spring onions, then serve immediately while the coating is still crisp.

Tips & tricks

  • Keep the batter thin enough to cling lightly; a heavy batter can stay soft in the air fryer.
  • Sauce the bites just before serving for the best crunch.
  • Gochujang varies in heat and saltiness, so use the smaller amount if yours is very spicy.
  • For a bowl, serve over rice with cucumber, shredded carrot and extra spring onions.
