These sticky air fryer honey garlic chicken bites are built for quick dinners and snack plates: lightly coated chicken crisps first, then gets tossed in a punchy honey, garlic, soy, ginger, and sweet chilli glaze. The short final air-fry helps the sauce cling without turning the basket into a burnt-sugar mess.

  1. Preheat the air fryer to 200°C for 3 minutes. If your basket is small, plan to cook the chicken in two batches so the pieces sit in a single layer.

  2. Pat the chicken dry. In a bowl, toss it with the cornflour, baking powder, salt, garlic powder, and pepper until every piece has a thin, dusty coating. Drizzle with the neutral oil and toss again.

  3. Arrange the chicken in the basket with space between pieces. Air fry at 200°C for 10–12 minutes, shaking or turning halfway, until golden at the edges and the thickest pieces reach 74°C/165°F internally.

  4. While the chicken cooks, make the glaze. In a small saucepan, combine the honey, soy sauce, rice vinegar, sweet chilli sauce, garlic, ginger, and sesame oil. Simmer over medium heat for 2–3 minutes.

  5. Stir in the cornflour slurry and simmer for 30–60 seconds, until glossy and lightly thickened. Remove from the heat; it should coat a spoon but still be pourable.

  6. Transfer the hot chicken to a clean bowl. Pour over the honey garlic glaze and toss until every bite is shiny and coated.

  7. Return the glazed chicken to the air fryer for 1–2 minutes at 200°C to set the sauce slightly, watching closely so the honey does not scorch.

  8. Serve immediately with spring onions and sesame seeds, over rice or with crunchy salad on the side.

Tips & tricks

  • Chicken thighs stay juicier, while breast gives a leaner bite; both work if cut evenly.
  • Do not add the honey glaze at the start of cooking, as the sugars can burn before the chicken is cooked through.
  • For the crispiest coating, leave space around the chicken pieces and cook in batches rather than piling them up.
  • Check doneness with a thermometer inserted sideways into the centre of the thickest bite; colour alone is not reliable for chicken.
