These crispy air fryer hot honey chicken bites are built for weeknights, game day plates, and rice bowls. A panko-cornflour coating gives the chicken crunch without deep-frying, while a quick buttered hot honey glaze adds sticky sweetness, chilli heat, and a bright splash of vinegar.

  1. Preheat the air fryer to 200°C for 3 minutes. Lightly oil the basket or crisper plate.

  2. Pat the chicken pieces dry. In a shallow bowl, whisk the egg with the buttermilk or milk.

  3. In a second bowl, mix the panko, cornflour, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne.

  4. Dip the chicken in the egg mixture, let excess drip off, then coat well in the panko mixture. Press the coating on so it sticks.

  5. Arrange the chicken in a single layer in the air fryer basket, leaving space between pieces. Spray or brush lightly with oil. Cook in batches if needed.

  6. Air fry at 200°C for 10–14 minutes, shaking or turning after 7 minutes, until golden, crisp, and the thickest pieces reach at least 74°C/165°F internally.

  7. While the chicken cooks, make the glaze. Combine the honey, butter, hot sauce, vinegar or lemon juice, grated garlic, and chilli flakes in a small saucepan. Warm over low heat for 2–3 minutes until melted and glossy, or microwave in short bursts and stir well.

  8. Transfer the cooked chicken to a clean bowl. Pour over the hot honey glaze and toss quickly until coated. Serve immediately with spring onions if using.

Tips & tricks

  • For the crispiest coating, do not overcrowd the basket; steam softens panko and slows browning.
  • Check several pieces with a thermometer if the chicken bites vary in size. Poultry must reach 74°C/165°F.
  • Use chicken thighs for a juicier bite or chicken breast for a leaner result.
  • For a milder glaze, reduce the hot sauce to 15 ml and skip the chilli flakes. For extra heat, add more cayenne to the coating.
  • Toss with the glaze only after air frying so the honey does not burn before the chicken is cooked through.
