This no-thaw method is for frozen dumplings, potstickers, gyoza, and mandu straight from the freezer. The best everyday setting is 182°C/360°F for 8–10 minutes, while larger or extra-crispy dumplings do better closer to 188–193°C/370–380°F for 10–12 minutes.

  1. Preheat the air fryer to 182°C/360°F for 3 minutes for standard dumplings, or to 193°C/380°F if you want a crisper wrapper.

  3. Arrange the dumplings in a single layer in the air-fryer basket with a little space between each one. Cook in batches if they do not fit without touching.

  4. Air fry at 182°C/360°F for 8–10 minutes for standard potstickers or gyoza, flipping or shaking halfway through. For large mandu, use 188–193°C/370–380°F for 10–12 minutes.

  5. Check doneness before serving: the wrappers should be crisp at the edges and the filling should be steaming hot. For raw or uncertain fillings, check the center with a thermometer: poultry dumplings need 74°C/165°F, pork or beef ground-meat dumplings need 71°C/160°F, and seafood dumplings need 63°C/

Tips & tricks

  • For small gyoza, start checking at 7 minutes so the corners do not over-brown.
  • For extra-crispy dumplings, spray both sides with oil and add 1–2 minutes, checking often near the end.
  • If the wrappers look dry or floury, use a little more oil spray before the final 2 minutes of cooking.
  • For Bibigo-style larger mandu, expect the upper end of the time range and verify the center is hot before serving.
  • Avoid stacking dumplings; crowded dumplings steam instead of crisp.
